This is the first installment of the Cuba series.

I visited Cuba in 2016 and want to share the stories with you. You can read about some it on my blog, click here. Or you can listen to some stories here. For the women’s history, I’ve included information about Pilar Jorge de Tilla, a leading suffragist in 1920s and 30s Cuba.

Meat Substitute Subs

Preheat oven to 375° F. Brown the meat substitute, add the garlic during browning process. Once meat sub is ready, add diced green pepper, and red sauce. Simmer for about 10 minutes.

Cut sub roll in half. Put meat sub mix to cover the bread. Place provolone and mozzarella and put in oven until cheese is toasty and bubbly, about 10-12 minutes. If you don’t want bread, you can do what I did and just put sauce in small dish and cover with cheese. I added pickled jalapeño peppers to me.

The above recipe is enough for 2 – 3 servings.
